innovation of fresh meat injection with BI-183
target
  • The requirement for a fresh meat injection is on the one hand the precise and homogenous brine injection.
  • Another requirement is that the surface of the product should not be too moisten with the brine, otherwise a long drying phase is necessary before packaging.
Solution Part 1

The air spring needle box for fresh meat injection are equipped with special needles that are 4mm in diameter deposited on 2 mm:

  • Individual single needles control as well die contact control ( injection only inside the product ) and in addition only the 2mm portion of the needle are injected.
  • This ensures minimum possible puncture holes - consumer invisible holes- and at the same time a maximum strength of the overall needle.
  • By the Inject Star needle contact system ensure that the needle begins to spray just after the insert in the product and thus the surface is kept up to dry. As it functions only during spraying of insertion is further ensured that after the needle moving out no brine spread over surface happens.
Solution Part 2
  • Because of the exclusive linear drive system of the Inject Star BI-183 an ideal homogeneous distribution of fresh meat brine is guaranteed in all layers. The linear drive and injection system it is programmable down to which layer the product should be injection, especially in most customer cases the meat thickness is uniform ( portion control ).
  • The fresh meat versions of the BI-183 are equipped with plastic conveyor belts, which cause no mechanical damage of the product.
General

Hygiene:
At the BI-183 both the brine filter system and the injection area are cooled. The temperature of the brine in the brine filter system is permanently controlled according to the value programmed. In conjunction with the Inject Star product data collection system those parameter as well as additional product parameter such as temperature of the product to be injected , brine pressure and nominal/actual deviation can be collected and recorded for later analysis.

Cleaning:
Already in the development phase a lot of emphasis has been put on the requirement that the machine can be easily be cleaned and the brine system is easily accessible. As all Inject Star machine is of course the complete machine until to the last screw build by 100% stainless steel. The BI-183 is already equipped with a fully integrated rinsing program allows an automatic cleaning of the entire pump -tube- and needle system.

Touch Screen Computer Control ISC-E40:
Possibility to store up to 100 production programs. Different - important especially for fresh meat injection - parameters such as the pressure of the brine, the injection depth of the needles etc. can be easily specified in the programs.
